Huevos rancheros is quite possibly the best breakfast on earth. After entering the cruise-phase of this diet, making this dish became my top priority. I have to say I think it came out rather well, this dish is therapy for the soul if you haven’t had veggies for a while.
- 1 link turkey hot italian sausage or 2 links uncooked turkey breakfast sausage
- 4 egg whites
- 2 tbsp rondele (R) light garlic and herb spreadable cheese or babybel (R) light cheese
- 3 tbsp good salsa
- 1 tbsp Nonfat sour cream
Heat frying pan to med-high & lightly coat with olive oil. Remove sausage casings, break suasage apart and fry them until they brown but not burn, stir frequently (4-5 min). Remove sausage from frypan and place the nuggets on paper towels to remove any excess moisture or oil. Wipe the frypan clean with dry towel (carefully) to remove any stuck on residuals.
Set pan back on medium heat, lightly grease with pam or olive oil. Add sausage and eggs, cook & stir until eggs are scrambled. Remove from heat and add cheese, stir in immediately until all eggs are evenly coated. Top the eggs with delicious salsa and sour cream! enjoy!
