Crusted Drumsticks – Recipe

Eating these drums felt so guilty, but alas they were diet friendly! These are a great meal to serve to non-dieters, also a great family friendly meal!

Ingredients:

  • about 12 drumsticks( a.k.a. chicken legs) skins removed for the dieters, skins on for the indulgers
  • 2-3 oz light balsamic vinaigrette
  • 1 cup oat-bran
  • 2 tbsp grated Parmesan cheese
  • 2 tsp paprika
  • 1 & 1/2 tsp salt
  • 1/8 tsp ground pepper
  • 1/4 tsp dry parsley
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 2 1-gallon Ziploc bags
  1. Place the chicken and balsamic dressing in a ziplock bag, close, remove excess air, and toss until evenly coated
  2. Let marinade for 30+ minutes, flipping the bag occasionally
  3. Preheat oven to 425°F
  4. Combine the oat-bran, Parmesan, and spices
  5. place half of the chicken and half of the oatbran mix in a new ziplock bag; toss to coat evenly
  6. remove the coated chicken and place on an un-greased baking sheet (foil lining recommended)
  7. repeat steps 5&6 for the remaining chicken & oat-bran mix
  8. Bake chicken at 425°F for 50 minutes

  1. Interesting! I’ve seen recipes that use cornflakes, but never oat bran. Looks healthy and delicious!
