Vanilla Greek Yogurt, sugar-free recipe

When I was checking out the yogurts at the supermarket, all the vanilla flavored brand-names where loaded with sugar. So I experimented and came up with this recipe. If the vanilla beans are two expensive at the grocery store, think about buying them off amazon.com for a fraction of the price, its a good investment.


  • 2 lbs fat-free plain yogurt unsweetened
  • 2/3 cup baking slpenda
  • 1 vanilla bean – optional, but recommended
  • 1 tsp vanilla extract

Place the the yogurt, splenda, and vanilla extract in a large mixing bowl. Slice the vanilla bean lengthwise, with the broad side of your knife, scrape the seeds into a pile, place those seeds in the bowl with the rest of your ingredients. Mix well, ensure the seeds don’t have too many clumps. A good mixing will smoothen the yogurt.


For a single serving solution, try 1/8 tsp vanilla extract plus 2 tsp (1-1/2 – 2 packets) splenda into 6-8 oz cup of o% fat, unsweetened, plain greek yogurt, mix and its yummy!


Dark Chocolate Truffles, Candies, and Chocolate Chips

I decided to pursue this recipe after trying a recipe in the Dukan Diet book for Chocolate Chip Cookies. I was very disappointed with how the whole recipe turned out, but in particular the recipe for chocolate chips was a disaster. I believe that this recipe is a big improvement, but I’ve had mixed feedback. These candies are a welcomed change to someone who hasn’t had chocolates in a month or two but I don’t think that they’ll fool many non-dieters. I also like to add these chocolate chips into my galette every once-in-a-while.

Master Recipe – ‘master mix’

  1. Heat chopped chocolate in the double boiler
  2. Slowly mix in the creamer and splenda as the chocolate melts (1/4 cup at a time)
  3. Mix frequently with a fork
  4. When all the chocolate is melted and the creamer and splenda are mixed in; stir quickly with a whisk until smooth
  5. Adjust flavor with more splenda if desired

For truffles

  1. Remove the ‘master mix’ from the double boiler and stir every 30 seconds until the mix gains consistency.
  2. Using 2 spoons portion about 1 tsp each onto a baking sheet covered with parchment paper (do not roll into balls)
  3. Place in freezer for 1/2 hour
  4. Store in the fridge, or freeze for long term storage

For candies

  1. Remove the ‘master mix’ from the heat
  2. Immediate portion 1 tsp onto baking sheet covered with parchment paper, the hot liquid should form 1/4″ thin disks
  3. Place in the freezer for 20 minutes
  4. Store in the fridge, or freeze for long term storage

For Choclate Chips

  1. Coarsely chop the ‘candies’
  2. Store in the freezer
